"Purple hue with a feathered fuchsia rim. Ripe blueberry scents with a light flintiness. Plump and juicy with cherry and plum fruit laced with obvious mineral flavors. Excellent length packed with black fruit and a trailing peppery nuance."

"From the beginning you can tell that this Bordeaux-style blend has the requisite components to make the grade. The bouquet offers baking spices, berry and vanilla in large doses, while the palate is ample, fresh and fairly racy. Nothing dull or clumsy here; it's a balanced structured wine with aging ability."
Tasting Notes:
Perfectly balanced with an excellent structure, it exhibits aromas of blackberry, strawberry and black pepper with notes of chocolate and tea that combine with flavors of plum, raspberry and vanilla with notes of Morello cherry liqueur and roasted walnut to complement the sweet, rounded tannins. This exceptional wine has great fruit concentration and a velvety finish.
Vinification:
After selecting the very best bunches, the grapes underwent a destemming process before being moved to stainless steel tanks. Following a 25% drawing off process, pre-fermentative maceration at low temperatures was performed and fermentation at controlled temperatures of 81°F through selected yeasts, three daily pumping over activities and from one to two delestages per day
Aging:
It was aged in new French (85%) and American (15%) oak for eighteen months and then aged eight more months in the bottle before release. This wine was hand crafted by our winemaker, Silvio Alberto, in collaboration with Michel Rolland.
Food Pairings:
Our Grand Reserve Pasionado is the perfect companion to grilled or roasted beef or lamb, spicy vegetables, hearty sauces and rich stews.
