Accolades:

Deep, dark garnet hue. Red fruit aromas with cedar and clove with hints of vanilla. Minty cherry flavors laced with fine-grain tannins. Dry, chalky close with licorice-like sweetness.

Tasting Notes:

This Cabernet Sauvignon has a very good body and is well balanced with an outstanding structure. Aromas of plum, blackberry, blueberry, almonds and vanilla with notes of red pepper, smoke and flowers are balanced with flavors of cherry, black pepper, spices, black currant and mocha cream with notes of red fruit liqueur and toasted bread that complement the elegant, sweet tannins to produce a long and fresh finish to this wonderful wine.

Vinification:

After selecting the very best bunches, the grapes underwent a destemming process before being moved to stainless steel tanks. Following a 10% drawing off process, pre-fermentative maceration at low temperatures was performed and the wine was fermented at controlled temperatures of 79° F through selected yeasts, three daily pumping over activities and from one to two delestages per day

Aging:

It was aged with French and American oak for eight months and then aged six more months in the bottle before release. This wine was hand crafted by our winemaker, Silvio Alberto, in collaboration with Michel Rolland.

Our Cabernet Sauvignon is the perfect companion to many foods, including hearty cheeses, spicy pastas and roasted or grilled beef or lamb.
