Tasting Notes:

A nice rose coloured wine with fruity aromas of strawberry and apricot. The palate is medium bodied with a nice rich mouthfeel exuding flavours of yellow plums, apricots and pear.

Vinification:

What most people aren't aware of is that the skin of Pinot Grigio grapes is a rose quartz colour, not a green or yellow colour. The original method of producing Pinot Grigio was to have the skins in contact with the juice for a period of time giving the wine a rose coloured tinge and also a little more structure and body. This 'Rosadis' is a result of the Piont Grigio skins being left in contact with the juice for about 8-12 hours.

Food Pairings:

Light antipasto's, olives, fish, white meats i.e. pork, veal, chicken, the nice acidity will also help with any cream sauces. A versatile wine that is easily paired with many different dishes!
