Tasting Notes:

This vinatge is much more like the 'baby Amarone' ripassos can be. There is much more deep, concentrated fruit, rose petals and tar on the nose while the palate is quite soft and supple yet very juicy. The wine finishes with very satisfying sour blackberry, cherry, licorice and coffee aftertaste.

Vinification:

skin contact maceration and fermetation for 12 days at controlled temperature of 25°C. Less are kept just below the surface of fermenting must according to the "cappello sommerso"(submerged cap)system. By the end of march the wine is poured on the lees of the just fermented Amarone. The residual yeasts induce a mallolatic fermentation in the Valpolicella which increase alcohol and texture. This system is called "Ripasso" (lit.re-run).

Aging:

Aged in steel and traditional slavonian oak for two years. Further refinement in the glass

Food Pairings:

A nice pairing with pasta and steak with simpler sauces. Also works really well as a pizza or bbq wine.
